This delightful dish is the perfect blend of creamy avocados, juicy tomatoes, and crisp romaine lettuce, all tossed together in a tangy dijon balsamic vinaigrette dressing.
Ingredients
All you need are these fresh ingredients.
1 head of romaine – a head of romaine lettuce, rinsed and chopped, provides a crisp and refreshing base for the salad.
3 tomatoes – chopped Roma tomatoes. Grape or cherry tomatoes would also be delicious.
1 avocado – a perfectly ripe avocado cut into chunks. Feel free to add an extra avocado or two if you’re an avocado lover.
Small package of pine nuts – add pine nuts for a subtle nutty flavor and satisfying crunch. Find regular pine nuts in the snack or baking sections of your grocery store.
8 ounces of parmesan cheese – shaved parmesan is our favorite (and a bit ‘fancy’), but you can also use shredded parmesan.
Dijon balsamic dressing – we love to make our own dijon balsamic (it’s so easy and yummy!), but you can buy pre-made dressing if you prefer.
Supplies & Favorite Tools for Chopping Salads
Here are a few kitchen tools you’ll need.
Cutting board and knife – we recommend a non-slip cutting board and a chef’s knife to chop the romaine lettuce and tomatoes.
Avocado slicers (or pairing knife and spoon) – to slice and remove the avocado you can use an avocado slicing tool or a paring knife and spoon.
Serving bowl and spoon – use a medium-sized bowl and a mixing spoon to combine all the ingredients together.
Salad spinner – not required, but salad spinners work great to remove water from the lettuce after rinsing.
How to Make Avocado Tomato Romaine Salad
Follow these simple steps to make this yummy, flavorful salad.
Note: If you plan to make homemade balsamic dijon, follow this recipe and chill in the fridge while preparing the salad.
Step 1 | Slice avocado into chunks
Slice the avocado and remove it using a spoon or avocado tool.
Step 2 | Chop the tomatoes
Wash and chop the roma tomatoes.
Step 3 | Cut the romaine
Wash and chop fresh romaine lettuce. Use a salad spinner to remove any excess water, if necessary.
Step 4 | Assemble the Salad
Add the chopped romaine lettuce to a medium serving bowl.
Add the sliced avocado and tomatoes.
Top with pine nuts and shaved parmesan cheese.
Gently toss to mix all the ingredients together.
Step 5 | Drizzle with Dressing
Drizzle the dijon balsamic dressing over the salad just before serving.
Another option is to have guests add their own dressing. This way people can customize the amount of dressing to their liking. Plus, the salad won’t get soggy if you have any leftovers.
