Gorgonzola Steak with Avocado Pine Nut Salad

Try this delicious dinner — gorgonzola steak and avocado pine nut salad with homemade dressing. It’s a great meal to serve when you’re entertaining guests. 

Gorgonzola Steak with Avocado Pine Nut Salad

Welcome! The kids and I just spent a week in the Bitterroot in Western Montana visiting family.  It’s awesome that I could take a week of “vacation” and still continue this work from home adventure.  There is something to be said about location independence.  From a recent article in the USA Today titled the YouEconomy, there’s more and more movement away from the traditional 9-5.  I know I’m enjoying my journey.

This post continues my special series of sharing great recipes from friends and family.  Last week I shared a delicious appetizer recipe Classic Pickle Ham & Cheese Roll-ups.  As I’ve said before, I bet you can’t eat just one or a dozen for that matter. 😉

This week I’m sharing what I consider the “Curley House Special.”  A grilled Gorgonzola steak with an avocado pine nut salad that is to-die-for!  My sister and brother-in-law make this steak often.  The salad is simple to throw together with a homemade dressing that is soooo good!

They made this for us during our stay last week.  And even though we weren’t able to eat it right away, it was so delicious and the steak was so juicy even an hour or so later.  (With 1 infant, 2 toddlers, 1 seven-year-old going on 13 — you may get where I’m coming from!)

Ingredients

Gorgonzola Steak

  • 2 1/2 to 3 lbs petite sirloin steak
  • Steak rub (we used 5-0 rub)
  • 1/2 stick butter
  • 6 oz Gorgonzola crumble cheese
  • 1/2 tsp garlic salt
  • 1/4 tsp pepper

Avocado Pine Nut Salad

  • 1 head of romaine lettuce
  • 3 Roma tomatoes
  • 1 avocado
  • 1 small package pine nuts
  • 8 oz shaved Parmesan cheese
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 tbsp dijon mustard
  • 1 1/2 tbsp brown sugar
  • Pinch of salt

Recipe Instructions & Tips

Grill Steaks

Prepare by pre-heating your grill on high.  Gather the steaks, rub seasoning, non-stick spray and grilling tools.  Spray the cooking area with non-stick spray.

Place steaks on the grill and sprinkle with steak rub.  Sear both sides on high heat.

Next, turn off the heat on one burner (or one side) of the grill. Move the steaks to the side you turned off. (This is called indirect grilling where food is placed to the side of the heat source.)

Grill until desired doneness is achieved. You can use a meat thermometer as well.

Gorgonzola Topping & Broiling

While you are grilling the steaks, you can prepare the Gorgonzola mixture.

Add the garlic salt and pepper to the Gorgonzola cheese.

Melt the butter and add to the Gorgonzola mixture. Mix all ingredients well.

Top each steak with a generous amount of the Gorgonzola mix.

Broil the steaks on high in the oven. (Leaving the oven door open while broiling.)

The steak will be sizzling and the Gorgonzola topping will be golden brown.

Avocado Pine Nut Salad

I’ve never tried pine nuts until my sister made this salad for us.  They’re delicious, especially when combined with the other ingredients.

Chop the romaine, Roma tomatoes, and avocado.  Add to a medium-sized serving bowl.  Top with pine nuts and shaved Parmesan cheese.

To make the balsamic dressing, combine balsamic, olive oil, Dijon mustard, brown sugar and a pinch of salt.  You can mix it in a bowl or use a dressing shaker.

Serve & Enjoy!

Serve the steaks sizzling hot. Pair with the avocado pine nut salad. We each added our own dressing so the leftover salad didn’t get soggy.  But you could toss the dressing prior to serving if you’d like.

Notes

You can also pan fry the steaks instead of grilling.
