Have you tried a pineapple corer? They are the best tool to core and slice pineapple at the same time. And if done just right and you leave the bottom of the pineapple intact, you can drink your cocktail right out of the pineapple.
How to Make a Pineapple Mimosa
Grab your champagne glass and fill the bottom with cream of coconut. Next, add one part orange juice and one part pineapple juice. Then give it a good stir.
Top with 2 parts champagne. The top of the glass will be a good mixture of bubbly from the champagne and a bit frothy from the coconut cream. So good!
The best part about mimosas is that you can switch up the juice and champagne mixture to your liking. For example, you might be all about 90% bubbly and 10% juice, while we prefer a 50/50 blend.

Make this recipe into pineapple mimosa punch simply by using a punch bowl and following the same formula. (Cream of coconut to taste, 1 part orange juice, 1 part pineapple juice, and 2 parts champagne.)
