As the weather starts to cool down, we find ourselves reaching for our waffle maker more and more often. There’s just something about a warm, fluffy waffle that screams comfort food. And what could be better than pumpkin spice waffles?

This recipe is super easy to follow, and the end result is delicious! If you’re looking for a cozy breakfast idea, give these homemade pumpkin spice waffles a try.

Pumpkin Waffle Ingredients with Labels

Ingredients

Eggs – whole eggs, both egg yolks and whites.

Milk – we use 2% milk. You can also use buttermilk, although it will have a stronger taste. We don’t find that it adds any extra fluff to the waffles, but some others swear by it.

Oil – vegetable oil. You can also swap this out for melted butter. (If you use salted butter, then skip the salt.)

Vanilla – pure vanilla extract, homemade or purchased at the store.

Pumpkin – be sure to use pumpkin puree, not the pumpkin pie mix in a can.

Flour – all-purpose flour.

Sugar – granulated white sugar. You could also use brown sugar or a combination of the two.

Cornstarch – this helps the waffles get crisp around the edges.

Baking powder – baking powder helps make the waffles fluffy.

Salt – plain salt, like iodized table salt.

Pumpkin pie spice – use our homemade pumpkin pie spice blend (cinnamon, ginger, nutmeg, and cloves) or store-bought.

Supplies

Mixing bowls/spoons – one each for the wet ingredients and one set for the dry ingredients.

Measuring cups/spoons – both dry and liquid measuring cups and spoons. We like to use a 1/2 measuring cup to measure out the batter into the waffle maker. (Adjust for the size of waffle maker you have).

Waffle iron – we love to use an iron with square-shaped waffles. You can use a round Belgian-style waffle maker; just know it will take a bit more time to cook and crisp the edges. You can also find really cute pumpkin-shaped waffle irons.

Cooking spray – we find that spraying the waffle iron once, in the beginning, is sufficient to prevent sticking.

How to Make Pumpkin Waffles

Follow these simple steps to make homemade pumpkin waffles.

Step 1 | Preheat waffle maker

Start by preheating your waffle maker.

Step 2 | Mix wet ingredients

Next, combine the wet ingredients in a medium-sized mixing bowl – eggs, milk, oil, vanilla extract, and pumpkin.

Step 3 | Mix dry ingredients

Then, mix the dry ingredients in a separate bowl – flour, sugar, cornstarch, baking powder, salt, and pumpkin spice.

Step 4 | Fold dry ingredients into pumpkin mix

Fold the dry ingredients into the pumpkin mixture. Mix well, but don’t over-mix. Some lumps are okay.

Step 5 | Pour batter into waffle iron

Lightly grease your waffle iron and pour almost 1/2 cup of batter into each waffle square. Note: this amount may need to be adjusted depending on your waffle maker.

Step 6 | cook for 3 to 4 minutes

Close the waffle iron and let it cook for 3-4 minutes. (Time may vary depending on your waffle maker.)

Check to make sure the waffles are browned and lightly crisped on the outside. Then remove carefully from the iron onto a serving plate.

Repeat until all of the waffle batter is gone.
