FOR THE KNOEPHLA NOODLES

Wash and chop all produce. This includes mincing garlic, chopping onions, and slicing carrots and celery.

1

Make the knoephla dough: Mix flour, salt, and baking powder. Add water and eggs. Knead until it's not sticky.

2

Melt butter in a large pot. Sauté onions and garlic until soft.

3

Pour in chicken broth, then add veggies, seasonings, and cream. Stir well.

4

Bring to a gentle boil. Reduce heat and simmer until potatoes and carrots are tender.

5

While veggies cook, roll and cut your knoephla dough into small dumplings.

6

Once veggies are tender, add dumplings to the soup. Cook for about 5 minutes.

7

Make a flour slurry with broth. Add to the soup and cook until slightly thickened.

8

Garnish with parsley. Serve with bread or lefse for dipping.
