- 8 eggs
- 1/2 cup half-and-half, or milk
- 1/4 cup diced green pepper
- 1/4 cup green onions
- 1/4 cup chopped spinach
- 3/4 cup diced ham or bacon (cooked), divided
- 3/4 cup shredded cheddar cheese, divided
- 1/4 tsp salt
- 1/8 tsp pepper
Instructions
- Preheat your oven to 350°F and grease your muffin tin or silicone muffin cups with cooking spray.
- Chop the green peppers, green onions, spinach, and bacon.
- Divide the green peppers, green onions, spinach and 1/2 cup of the bacon equally among the muffin cups.
- Combine the eggs, half-and-half (or milk), salt, pepper, and cheese in a medium mixing bowl (we use a mixing bowl or measuring bowl with a spout to make pouring the mixture easier).
- Pour the egg mixture equally into each muffin cup.
- Sprinkle with the reserved bacon and shredded cheese.
- Bake at 350°F for 18-20 minutes. Check at 18 minutes – if the middle is cooked the egg bites are done. If not, continue to cook in 2-minute increments until done, but be careful to not overcook. The egg bites will puff up during cooking and deflate slightly after you remove them from the oven.
- Serve warm and enjoy! You can also refrigerate or freeze for later.
Notes
- To make your prep time super quick, grab pre-diced ham or bacon (cooked), peppers, and onions at the grocery store.
- This recipe uses large eggs. Depending on the size you use, you may need to adjust the quantity accordingly.
