Lucky Charms Cookies

Colorful and fun cookies made with sugar cookie dough and Lucky Charms marshmallows. They’re a delightful treat for St. Patrick’s Day.

Ingredients

  • 1 cup butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ cups Lucky Charms oat cereal (cereal only, no marshmallows), ground into a fine powder
  • 3 cups Lucky Charms marshmallows, divided
  • ¼ cup sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. Using a food processor, grind 1 ½ cups of oat cereal into a flour-like consistency.
  3. In a medium bowl, mix together the cereal powder, flour, baking soda, baking powder, and salt. Set aside.
  4. In a large mixing bowl, cream together the butter and sugar.
  5. Add eggs and vanilla and mix well.
  6. Gradually add the flour mixture until well combined.
  7. Gently fold in 1 cup of the Lucky Charms marshmallows and sprinkles.
  8. Using a cookie scoop or spoon, drop dough onto an un-greased baking sheet (or use parchment paper for easy clean-up).
  9. Bake for 8-10 minutes (depending on your oven) or until the edges start to turn slightly golden brown.
  10. After removing the cookies from the oven (while they are still warm), add additional marshmallows to each cookie for decoration. Be sure to press them down into the cookie so they stay put.

  • Cookie scoop: we use a small cookie scoop, 1 tablespooon.
  • Storage: store in an airtight container at room temperature or in the fridge or freezer for extended periods.
