No-Bake Peanut Butter Oatmeal Cookies

Easy, delicious no-bake cookies loaded with peanut butter flavor and oatmeal.

Ingredients

Units Scale
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1 stick of salted butter (1/2 cup)
  • 3 cups quick-cooking oatmeal (or quick rolled oats)
  • 3/4 cup peanut butter

Instructions

  1. Begin by adding sugar, milk, and butter to a saucepan over medium heat.
  2. Once mixed well, bring the mixture to a boil and cook hard for 1 1/2 minutes.
  3. Then remove from the heat, add peanut butter, and mix well.
  4. Fold in the quick-cooking oatmeal and mix thoroughly. 
  5. Using a cookie scoop, drop by heaping scoop-fulls onto wax paper (or parchment).
  6. Allow the cookies to cool for at least  10 minutes. 
  7. Remove from wax paper and store in an airtight container until ready to serve.

Notes

  • Make sure to use wax paper or parchment paper to avoid sticking.
  • We use creamy peanut butter, but you could vary this recipe and use crunchy peanut butter.
