Blondies
- 1 cup (2 sticks) unsalted butter, melted
- 1 1/2 cups light brown sugar, packed
- 2 large eggs, room temperature
- 1 tbsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 cups diced apples (about 3 small apples or 2 medium)
Maple Glaze
- 2 tbsp butter, melted
- 2 tbsp maple syrup
- 1/2 tsp maple extract
- Pinch of salt
- 3/4 cup powdered sugar
Instructions
- Preheat to 350°F and line a 9.5×13” pan with parchment paper.
- In a small mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- Peel, core, and dice apples into small 1/4” pieces.
- In a medium mixing bowl, stir melted butter and brown sugar until smooth. Mix in the vanilla and eggs.
- Gradually add dry ingredients to wet until just combined. Do not overmix.
- Fold in the apples.
- Spread batter in the pan and bake for 30-35 minutes, until golden and a toothpick comes out clean.
- Cool completely.
- Mix butter, maple syrup, extract, salt, and powdered sugar. Drizzle over cooled blondies.
- Refrigerate for at least 30 minutes before cutting.
Notes
- Drizzling: For easy drizzling, pour the glaze into a sandwich bag and snip a small corner off to use as a piping bag.
- Cutting: Refrigeration before cutting is highly recommended. Be sure to use a sharp knife and wipe the knife off in between for best results.
- Storage: Store in an airtight container for up to 5 days at room temp or 2 weeks in the fridge.
