A cozy, fall-inspired treat, these apple blondies are loaded with warm spices and fresh apples then topped with a sweet, buttery maple glaze.

Ingredients

Blondies

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 1/2 cups light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups diced apples (about 3 small apples or 2 medium)

Maple Glaze

  • 2 tbsp butter, melted
  • 2 tbsp maple syrup
  • 1/2 tsp maple extract
  • Pinch of salt
  • 3/4 cup powdered sugar

Instructions

  1. Preheat to 350°F and line a 9.5×13” pan with parchment paper.
  2. In a small mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. Peel, core, and dice apples into small 1/4” pieces.
  4. In a medium mixing bowl, stir melted butter and brown sugar until smooth. Mix in the vanilla and eggs.
  5. Gradually add dry ingredients to wet until just combined. Do not overmix.
  6. Fold in the apples.
  7. Spread batter in the pan and bake for 30-35 minutes, until golden and a toothpick comes out clean.
  8. Cool completely.
  9. Mix butter, maple syrup, extract, salt, and powdered sugar. Drizzle over cooled blondies.
  10. Refrigerate for at least 30 minutes before cutting.

Notes

  • Drizzling: For easy drizzling, pour the glaze into a sandwich bag and snip a small corner off to use as a piping bag.
  • Cutting: Refrigeration before cutting is highly recommended. Be sure to use a sharp knife and wipe the knife off in between for best results.
  • Storage: Store in an airtight container for up to 5 days at room temp or 2 weeks in the fridge.
