Avocado Tomato Romaine Salad

A delightful & refreshing romaine salad with avocado and tomato, sprinkled with pine nuts and shaved parmesan drizzled with dijon balsamic vinaigrette.

Ingredients

Units Scale
  • 1 head of romaine lettuce
  • 1 avocado
  • 3 roma tomatoes
  • 1 small package pine nuts
  • 8 oz shaved Parmesan cheese
  • Dijon balsamic vinaigrette (see our homemade recipe)

Instructions

  1. Chop the romaine, roma tomatoes, and avocado. Add to a medium-sized serving bowl.
  2. Top with pine nuts and shaved Parmesan cheese.
  3. Gently toss to mix all the ingredients together.
  4. Drizzle the dressing over the entire salad and toss before serving or allow your guests to add their own.
  5. Serve and enjoy immediately!
