Cinnamon Sugar Roasted Almonds

Candied almonds with the perfect combination of cinnamon and sugar. Great for fall snacking and holiday gifting.

Ingredients

  • 1 egg white
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 16 ounces almonds

Instructions

  1. Preheat your oven to 250°F for slow roasting.
  2. Line a baking sheet with parchment paper and set it aside.
  3. Add the egg white and vanilla to a mixing bowl and whisk until frothy.
  4. Add the granulated sugar, brown sugar, cinnamon, and salt. Mix well.
  5. Add the almonds to the cinnamon-sugar mixture. Stir until well-coated.
  6. Spread the coated almonds evenly on the prepared baking sheet.
  7. Roast for 1 hour and 15 minutes, stirring them every 20 minutes.
  8. Allow the almonds to cool and store in an airtight container until ready to enjoy.

Notes

  • Stir the almonds and cinnamon sugar mixture until they are evenly coated.
  • Be sure to stir the almonds every 20 minutes during roasting to keep them from sticking together.
