- 1 large English cucumber
- 4 ounces cream cheese, softened
- 1 tbsp fresh dill, finely chopped + optional extra dill sprigs for garnish
- 1 tbsp fresh chives, finely chopped + optional extra for garnish
- Juice of 1/2 lemon
- 1/4 tsp salt, or to taste
- 1/8 tsp pepper, or to taste
- 4 ounces smoked salmon, cut into bite-sized pieces
Instructions
- Clean the cucumber and slice it into rounds.
- In a small bowl, mix the softened cream cheese with dill, chives, lemon juice, salt, and pepper until the mixture is smooth and evenly combined. Taste and add more salt and pepper if desired.
- Spread the herb cream cheese mixture over each cucumber slice (or add the mixture to a plastic bag and snip off the end, then squeeze the mixture on each cucumber). Top each one with a piece of smoked salmon.
- For a final touch, sprinkle a few additional chives or add a tiny sprig of dill on each bite.
- Place the cucumber salmon bites on a serving plate. They’re ready to be enjoyed immediately, or you can chill in the refrigerator before serving.

- Storage: store in the fridge in an airtight container for up to 3 days, though they are best enjoyed fresh on the same day you make them.
