We are big fans of recipes that look like they take way more effort than they actually do. These cucumber bites fit the bill. Not only do they look beautiful, but they taste amazing, too!

They are light and refreshing, and the cream cheese topping is so yummy. It pairs perfectly with the fresh crunch of the cucumber. Honestly, it’s one of those appetizers where you can’t help but reach for another…and maybe just one more!

Ingredient Notes

Here are notes on a few select ingredients (see the recipe card for the comprehensive of ingredients and amounts).

  • Cucumbers – we use English cucumbers. They’re the perfect size for this recipe, and their flavor is so good. You can use regular cucumbers if needed.
  • Salmon – ready-to-eat smoked salmon cut into pieces.
  • Garnish – garnishing with fresh dill sprigs really dresses up these bites. Another option is fresh chopped chives.
