Halloween Cookies with Googly Eyes

Delicious Halloween cookies, made with a cake mix for the cookie dough, topped with festive Halloween sprinkles and candy eyeballs.

Ingredients

Units Scale
  • Box of white cake mix (14.25 ounces)
  • 2 eggs
  • 1/2 cup vegetable oil
  • Food coloring, neon
  • Sprinkles with candy eyeballs, optional
  • Powdered sugar, optional

Instructions

  1. Preheat your oven to 350°F.
  2. Add cake mix, eggs, and oil to a medium bowl. Mix until combined, but do not overmix.
  3. Divide the batter into separate bowls and mix in food coloring (neon works great).
  4. Place the sprinkles and/or powdered sugar in small bowls. 
  5. Measure out a tablespoon (we use a cookie scoop) of dough and drop into sprinkles to coat. Place on a parchment-lined baking sheet.
  6. Bake for 8 to 10 minutes.
  7. Carefully place the candy eyeballs onto the cookies.
  8. Allow the cookies to cool completely.

Notes

  • Tip for perfectly round cookies: Swirl a circle cookie cutter around each warm cookie.
  • Storage: Store in an airtight container at room temperature for 4 to 5 days. You can refrigerate them for about a week or freeze them for up to 3 months.
  • Variations: We used 3 separate colors and 3 different ways to decorate (sugar sprinkles, powdered sugar, and a Halloween sprinkle mix); you can do as many or as few as you like.
