- Box of white cake mix (14.25 ounces)
- 2 eggs
- 1/2 cup vegetable oil
- Food coloring, neon
- Sprinkles with candy eyeballs, optional
- Powdered sugar, optional
Instructions
- Preheat your oven to 350°F.
- Add cake mix, eggs, and oil to a medium bowl. Mix until combined, but do not overmix.
- Divide the batter into separate bowls and mix in food coloring (neon works great).
- Place the sprinkles and/or powdered sugar in small bowls.
- Measure out a tablespoon (we use a cookie scoop) of dough and drop into sprinkles to coat. Place on a parchment-lined baking sheet.
- Bake for 8 to 10 minutes.
- Carefully place the candy eyeballs onto the cookies.
- Allow the cookies to cool completely.
Notes
- Tip for perfectly round cookies: Swirl a circle cookie cutter around each warm cookie.
- Storage: Store in an airtight container at room temperature for 4 to 5 days. You can refrigerate them for about a week or freeze them for up to 3 months.
- Variations: We used 3 separate colors and 3 different ways to decorate (sugar sprinkles, powdered sugar, and a Halloween sprinkle mix); you can do as many or as few as you like.
