Meatloaves
- 1 1/2 lb ground beef
- 1 package stuffing mix (6-ounce)
- 2 eggs
- 1/2 medium onion, diced
- 2 tbsp ketchup
- Salt and pepper to taste
Sauce
- 3/4 cup ketchup
- 1/4 cup brown sugar
- 1 tbsp Worcestershire
Garnish
- Parsley, finely chopped (optional)
Instructions
- Preheat oven to 350℉.
- Finely chop the onion.
- Mix ground beef, stuffing mix, egg, onion, ketchup, salt, and pepper in a large mixing bowl.
- Press 1/12 of the mixture into each muffin tin, we use a heaping cookie scoop for easy measuring.
- Bake for 15 minutes.
- Mix together ketchup, brown sugar, and Worcestershire to make the sauce.
- Remove from the oven and add sauce to cover each meatloaf.
- Bake for another 10 minutes (or until the internal temperature is 160℉).
- Remove from the oven, garnish with parsley, and serve with delicious sides like roasted or mashed potatoes and green beans. (Check out these meatloaf side ideas.)
Notes
- Storage: Store in the fridge for 2 to 3 days or in the freezer for 2 to 3 months.
- Variations: Try different stuffing flavors or substitute the homemade sauce with your favorite bbq sauce.
- No-chop version: Use 2 tablespoons of dried onion instead of fresh onion.
