Mini Meatloaf

Deliciously easy mini meatloaves made in muffin tin cups and topped with a simple homemade barbecue sauce.

Ingredients

Meatloaves

  • 1 1/2 lb ground beef
  • 1 package stuffing mix (6-ounce)
  • 2 eggs
  • 1/2 medium onion, diced
  • 2 tbsp ketchup
  • Salt and pepper to taste

Sauce

  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 1 tbsp Worcestershire

Garnish

  • Parsley, finely chopped (optional)

Instructions

  1. Preheat oven to 350℉.
  2. Finely chop the onion. 
  3. Mix ground beef, stuffing mix, egg, onion, ketchup, salt, and pepper in a large mixing bowl.
  4. Press 1/12 of the mixture into each muffin tin, we use a heaping cookie scoop for easy measuring.
  5. Bake for 15 minutes. 
  6. Mix together ketchup, brown sugar, and Worcestershire to make the sauce.
  7. Remove from the oven and add sauce to cover each meatloaf.
  8. Bake for another 10 minutes (or until the internal temperature is 160℉).
  9. Remove from the oven, garnish with parsley, and serve with delicious sides like roasted or mashed potatoes and green beans. (Check out these meatloaf side ideas.)

Notes

  • Storage: Store in the fridge for 2 to 3 days or in the freezer for 2 to 3 months.
  • Variations: Try different stuffing flavors or substitute the homemade sauce with your favorite bbq sauce.
  • No-chop version: Use 2 tablespoons of dried onion instead of fresh onion.
