Crispy Oven Roasted Potatoes

Golden and crispy potatoes roasted in the oven with butter and seasoning. The easiest (and most delicious!) side dish for dinner or any meal.

  • Total Time: 50 minutes
  • Yield: 8-10 servings 1x

Ingredients

Units Scale
  • 2 lbs baby red potatoes
  • 1/2 cup butter (1 stick)
  • 2 to 3 teaspoons seasoned salt
  • Parsley, finely chopped (optional garnish)

Instructions

  1. Preheat oven to 425°F.
  2. Wash and dry the potatoes and parsley. Cut the potatoes in half. Finely chop the parsley.
  3. Arrange the potatoes in a single layer on a parchment-lined baking sheet.
  4. Slice the butter and place on top of the potatoes.
  5. Sprinkle the seasoned salt over the potatoes and butter (feel free to use more or less than the amount listed depending on your own preference).
  6. Bake time will depend on preference:
    • 30-35 minutes: tender potatoes or
    • 40-45 minutes: golden brown tender potatoes or
    • 50-55 minutes for crispy potatoes.
  7. Stir every 10 to 15 minutes.
  8. Remove from the oven, garnish with parsley, add to a serving bowl, and serve immediately. 

Notes

  • Storage: store any leftovers in the fridge for 2 to 3 days, or in the freezer for 2 to 3 months.
  • Variations: try different seasonings, top with shredded parmesan, or swap parsley for other herbs.
