- 2 lbs baby red potatoes
- 1/2 cup butter (1 stick)
- 2 to 3 teaspoons seasoned salt
- Parsley, finely chopped (optional garnish)
Instructions
- Preheat oven to 425°F.
- Wash and dry the potatoes and parsley. Cut the potatoes in half. Finely chop the parsley.
- Arrange the potatoes in a single layer on a parchment-lined baking sheet.
- Slice the butter and place on top of the potatoes.
- Sprinkle the seasoned salt over the potatoes and butter (feel free to use more or less than the amount listed depending on your own preference).
- Bake time will depend on preference:
- 30-35 minutes: tender potatoes or
- 40-45 minutes: golden brown tender potatoes or
- 50-55 minutes for crispy potatoes.
- Stir every 10 to 15 minutes.
- Remove from the oven, garnish with parsley, add to a serving bowl, and serve immediately.
Notes
- Storage: store any leftovers in the fridge for 2 to 3 days, or in the freezer for 2 to 3 months.
- Variations: try different seasonings, top with shredded parmesan, or swap parsley for other herbs.
