Mix up your brunch menu with these Pineapple Mimosas! They’re a tropical twist on the classic mimosa, perfect for Summer.

Ingredients

Scale
  • Cream of coconut
  • 1 part orange juice
  • 1 part pineapple juice
  • 2 parts champagne
  • Pineapple chunks for garnish

Instructions

  1. Fill the bottom of a champagne glass with cream of coconut.
  2. Add 1 part orange juice.
  3. Add 1 part pineapple juice.
  4. Stir the coconut cream and juices.
  5. Top with 2 parts champagne.
  6. Add pineapple chunks for garnish.
  7. Cheers!

Notes

  • You can also use coconut milk or malibu coconut rum instead of cream of coconut.
  • Orange slices or maraschino cherries can be used for garnishes too.
