Pineapple Mimosas

Mix up your brunch menu with these Pineapple Mimosas! They’re a tropical twist on the classic mimosa, perfect for Summer.

  • Total Time: 5 minutes




  1. Fill the bottom of a champagne glass with cream of coconut.
  2. Add 1 part orange juice.
  3. Add 1 part pineapple juice.
  4. Stir the coconut cream and juices.
  5. Top with 2 parts champagne.
  6. Add pineapple chunks for garnish.
  7. Cheers!


You can also use coconut milk or malibu coconut rum instead of cream of coconut.

Orange slices or maraschino cherries can be used for garnishes too.
