Sugar Cookie Layer
- 1 cup salted butter, softened
- 1 cup granulated sugar

- 3/4 cup salted butter, softened
- 3 cups powdered sugar
- 3 tsp vanilla extract
- 3 tbsp heavy cream

Instructions
- Preheat the oven. Preheat your oven to 350°F.
- Prepare the pan. Spray a 9×13-inch baking pan with baking spray and line it with parchment paper. Set aside.
- Cream the butter and sugar. In a mixing bowl, cream the softened butter and granulated sugar together until well combined.
- Add the egg and vanilla. Add the egg and vanilla extract to the butter mixture. Mix until smooth.
- Incorporate the dry ingredients. Gradually add the flour and baking powder to the wet mixture. Mix until a dough forms.
- Fold in the sprinkles. Gently fold the sprinkles into the dough using a spatula. Be careful not to over mix.
- Press the dough into the pan. Evenly press the dough into the prepared baking pan.
- Bake. Bake in the preheated oven for 14 to 16 minutes, or until the edges are lightly golden. Let the bars cool completely.
- Prepare the frosting. In a separate bowl, beat the softened butter, powdered sugar, vanilla extract, and heavy cream until the frosting forms soft peaks.
- Frost and decorate. Spread the frosting over the cooled sugar cookie bars. Top with additional festive sprinkles.
- Cut and serve. Once the frosting has set, cut the bars into squares and serve! Or store for later.
Notes
- Storage: Store the frosted sugar cookie bars in an airtight container at room temperature for up to 4-5 days. If you need to keep them longer, you can refrigerate them for up to a week.
- Freezing: These cookie bars freeze well! Wrap them tightly in plastic wrap and store in an airtight container or freezer bag for up to 3 months. To thaw, leave them at room temperature for a couple of hours.
- Tip for even cutting: For neat, even squares, use a ruler or measuring tape to mark your cut lines. Divide the width by 4 and the length by 6, then use a knife (run it under hot water for clean cuts) to slice through the bars. Wipe off your knife each time.
- Customize with colors: Feel free to add food coloring to both the dough and frosting for a more festive look. Just mix in a few drops of food coloring until you reach your desired color.
