Raspberry Cheesecake Dessert Salad

After-Refridgerating
A raspberry cheesecake dessert salad that is so delicious.  Not to mention it’s super easy. For large crowds, I would plan to double or triple the original recipe at the very least.

Ingredients (Plan to Double or Triple)

  • 32 oz vanilla yogurt
  • 8 oz Cool Whip
  • 3.4 oz Cheesecake Jello Pudding Mix
  • 2 packages frozen raspberries (1 package optional for topping)
  • 1 can Reddi Whip – optional

Instructions

  1. In a medium-sized bowl, blend the vanilla yogurt and Cool Whip.
  2. Add the Jello Cheesecake pudding mix and blend with a whisk or an electric mixer.
  3. Fold in one small package of frozen raspberries. Refrigerate 1 to 2 hours before serving. This will allow the raspberries to thaw and add flavor to the cheesecake mixture.
  4. Optional – add to a trifle bowl or fun serving bowl. On top of the cheesecake mixture, decorate with the rim of the bowl with Reddi Whip then add the frozen raspberries to the middle.
  5. Boom! The easiest dessert salad you’ll ever make.

Optional “dressed up” version, top with Reddi Whip and extra raspberries.

Not Your Store-Bought Macaroni Salad

serve salad

I really wish my pictures did this salad justice. I promise you will not be disappointed. Be sure to use miracle whip, not regular mayo.

Ingredients (Plan to Double or Triple)

  • 1/2 box medium shell pasta
  • 1 small block of medium cheddar cheese
  • 1 medium onion
  • 1 can peas
  • 1 can tuna

Sauce

  • 2 1/2 c miracle whip (do not substitute mayo!)
  • 3/4 tbsp. yellow mustard
  • 1/2 c milk
  • 1/2 tbsp. sugar
  • 1 tsp. salt

Instructions

  1. Cook one-half of a box of shell pasta (1 pound box) according to the directions on the box. Rinse with cold water. (Warm pasta and miracle whip is not a good combination!) Add the cooked pasta to a medium serving bowl.
  2. Drain the tuna, add to the pasta.
  3. Drain the can of peas, add.
  4. Dice 1 medium onion, add.
  5. Chop and add 1 small block of medium cheddar cheese.
  6. Now for the sauce –in a separate bowl combine the miracle whip, milk, mustard, sugar, and salt. Mix well.
  7. Add the sauce to the pasta, tuna, peas, onion, and cheese mixture. Stir until everything is coated.
  8. Refrigerate until served.
