Ingredient Notes

Here are the simple ingredients you’ll need. Read on for a few notes.

Rosemary, Cherry Tomatoes, Mozarella Balls, Balsamic Glaze, and Salt and Pepper in Bowls on White Marble Surface
  • Cherry tomatoes – round cherry tomatoes look the best.
  • Mozzarella – marinated fresh mozzarella balls. We like the Galbani mozzarella marinated in oil, herbs, and spices. You can marinate your own—cover mozzarella with olive oil, add Italian seasoning and red pepper flakes, and refrigerate for at least 30 minutes.
  • Rosemary – fresh sprigs of rosemary.
  • Balsamic glaze – Use balsamic glaze, not balsamic vinegar. We use the Bertolli balsamic glaze, you can also make a homemade glaze or reduction.
  • Salt and pepper – regular table salt and black ground pepper.

Prep produce and herbs.

Rinse the tomatoes and rosemary under cool water, then pat them dry.

Make skewers from rosemary.

Trim some leaves (needles) off the bottom of each rosemary sprig until you’re left with a couple of inches of bare stem.

Add mozzarella and tomato.

Spear one mozzarella ball and one tomato at the end of each rosemary sprig. (If the rosemary is tough to push through the tomato, use a toothpick to make a small hole first, then insert the rosemary.)

Place each skewer on a serving plate or platter.
