Romaine salad loaded with avocados, Roma tomatoes, pine nuts, and Parmesan cheese. Topped with a homemade balsamic dressing.

Ingredients
- 1 head of romaine lettuce
- 1 1/2 tbsp. brown sugar
- 1/2 tbsp. Dijon mustard
- 1/4 c olive oil
- 1/4 c balsamic
- 8 oz shaved Parmesan cheese
- 1 small package pine nuts
- 1 avocado
- 3 Roma tomatoes
- pinch of salt
Instructions
- Chop the romaine, Roma tomatoes, and avocado. Add to a medium-sized serving bowl.
- Top with pine nuts and shaved Parmesan cheese.
- To make the balsamic dressing, combine balsamic, olive oil, Dijon mustard, brown sugar and a pinch of salt. You can mix in a bowl or using a dressing shaker.
- Add dressing to each individual serving so the leftover salad doesn’t get soggy. Or toss the dressing over the entire salad prior to serving if you’d like.
Notes
Make the dressing ahead of time and pop in the refrigerator.
