Here are the ingredients you’ll need to make this delicious steak.

Grilled Steak

2 1/2 pounds of steak – we use petite sirloin steak, but you can use your favorite cut.

Seasoning – we use 5-0 rub (or whatever we have on hand), although any steak rub will work. You can also season it with classic salt and pepper.

Gorgonzola Butter Topping

1/2 stick butter – salted or unsalted butter.

8 ounces gorgonzola – crumbled Gorgonzola cheese, often found in the specialty cheese section of the grocery store.

1/2 teaspoon garlic salt – use regular garlic salt or substitute with a garlic powder and salt mixture using a 3:1 ratio of salt to powder.

1/4 teaspoon pepper – ground black pepper.

Is Gorgonzola the same as Blue Cheese?

While both Gorgonzola and Blue Cheese fall under the category of blue-veined cheeses and share some similarities, they are not exactly the same. Gorgonzola is a specific type of Italian cheese, traditionally made from cow’s milk, and known for its rich and creamy texture. It has a milder and less pungent flavor compared to some varieties of blue cheese.

How to Make Steak with Gorgonzola Butter

Follow these simple steps to make this delicious dinner.

Note: we prefer to grill our steaks and then top with gorgonzola butter and broil. But you can cook the steaks any way you prefer and then follow the recipe instructions for the topping.

Step 1 | preheat grill

Prepare to cook the steaks by pre-heating your grill on high. Once heated, clean the grill if needed.

Step 2 | Season steaks with rub

Coat the steaks on both sides generously with steak rub.

We use 5-0 rub, but you can use your favorite steak or beef seasoning. You can also season it with classic salt and pepper.

Step 3 | Sear steaks on both sides

On high heat (about 450°F), sear the steaks on both sides.

Step 4 | Use indirect heat to finish cooking

Next, turn off the heat on one burner (or one side) of the grill. Move the steaks to the side you turned off. (This is called indirect grilling where food is placed to the side of the heat source.)

Grill until the desired doneness is achieved. Keep in mind that the steaks will cook a bit more when broiling.

Step 5 | Mix gorgonzola topping

While you are grilling the steaks, you can prepare the Gorgonzola mixture. Add the garlic salt and pepper to the Gorgonzola cheese crumbles.

Step 6 | Add melted butter

Melt the butter and add to the Gorgonzola mixture. Mix all ingredients well.

Cover a baking pan with aluminum foil.

Move the steaks from the grill to the foil-covered baking sheet.

Broil the steaks on high in the oven. (Leave the oven door open while broiling.)

Immediately serve the steaks sizzling hot, as they will cool down quickly.

Should you rest your steak? It is typically recommended to allow steak to rest for 5 minutes before enjoying it to lock the juices in. But in our opinion—it doesn’t make that much of a difference. We’d rather enjoy the gorgonzola topping while it’s hot!
