A super easy ham and cheese omelet bake recipe — perfect for overnight guests. This version has no bread or hashbrowns & takes about 30 minutes.

Hey there – welcome to Northern Yum!

This past weekend we celebrated my son’s birthday. And we were blessed to have family in town visiting.

When we have company over – this ham and cheese omelet bake recipe is my go-to breakfast.

My Mom typically brings a variety of breakfast breads – pumpkin muffins, tea ring, or pull aparts. And I’ll make this egg bake and prep a fruit salad. Simple and exactly the type of recipe you need for a busy weekend!

This recipe doesn’t have bread or hashbrowns. And you don’t have to prep the night before.

It literally takes 10 minutes to assemble and another 20 to 22 minutes to bake.

No need to worry about making individual omelets for everyone. Not to mention trying to time when everything will be done.

And you change up the ingredients based on what your family and your guests like. My favorite is ham and cheese.

Grocery list

  • 8 eggs
  • 1/3 cup milk
  • 1 cup diced ham
  • 1/2 cup shredded cheddar cheese
  • 1/4 diced onion
  • pinch of salt and black pepper
  • chopped green onions (optional garnish)

Recipe Instructions + Tips

Preheat your oven to 400 degrees. Prepare and grease (I use Pam spray) a 7 x 11 pan.

The recipe will feed 4 to 6 people. So if you have more than six guests or they’re really good eaters – plan to make a few pans.

You can use a 9 x 9 pan and adjust the cooking time, as needed.

Layer the diced ham, cheddar cheese, and diced onions in the pan.

In a small bowl, whisk together the eggs, milk, salt, and black pepper.

Pour the egg mixture over the ham, cheese, and onions.

Bake at 400 degrees for 20 to 22 minutes.

The egg bake should be golden brown around the edges and the middle should not move as you take the pan out of the oven.

Garnish with chopped green onions (optional) and serve.

Feel free to add more shredded cheddar cheese on top. But I prefer it just the way it is.

Meal Prep

This egg bake makes for awesome meal prep. Make it at the beginning of the week. Slice into 4 to 6 pieces.

You can swap out ham for sausage, bacon, spinach or your favorite omelet ingredients.

Then add each piece to its own container with a serving of fruit or avocado. Super easy!
