When we have company over, this ham and cheese omelet bake recipe is our go-to breakfast. We pair it with a variety of breakfast breads, including pumpkin bread, banana bread, or caramel pull aparts, and a fruit salad. Simple and exactly the type of recipe you need for a busy weekend!

This recipe doesn’t have bread or hashbrowns, and you don’t need to prep it the night before. It literally takes 10 minutes to assemble and another 20 to 22 minutes to bake.
There is no need to worry about making individual omelets for everyone (or trying to time when everything will be done). You change the ingredients based on what your family and guests like. Our favorite is ham and cheese.
Ingredients
- 8 eggs
- 1/3 cup milk
- 1 cup diced ham
- 1/2 cup shredded cheddar cheese
- 1/4 diced onion
- pinch of salt and black pepper
- chopped green onions (optional garnish)
If you want to top it with cheese, plan another 1/2 cup of shredded cheddar cheese.
The recipe will feed 4 to 6 people. So if you have more than six guests or they’re really good eaters, plan to make a few pans.
How to Make This Ham & Cheese Omelet Bake
Follow these simple steps to make this delicious omelet bake.
Step 1 | Preheat oven to 400°F
Preheat your oven to 400 degrees Fahrenheit.
Step 2 | Prepare baking dish
Prepare and grease a 7 x 11 pan. (You can instead use a 9 x 9 pan and adjust the cooking time as needed.)
Step 3 | Add ham, Cheese, and Onions
Layer the diced ham, cheddar cheese, and diced onions in the pan.
Step 4 | Mix eggs, milk, and seasonings
In a small bowl, whisk together the eggs, milk, salt, and black pepper.
Step 5 | Add egg mixture to baking dish
Pour the egg mixture over the ham, cheese, and onions.
Step 6 | Bake for 20 to 22 minutes
Bake at 400 degrees Fahrenheit for 20 to 22 minutes.
Step 7 | garnish, serve and enjoy
The egg bake should be golden brown around the edges, and the middle should not move as you take the pan out of the oven.
Garnish with chopped green onions (optional) and serve. Feel free to add more shredded cheddar cheese on top.
